Dark Matter Coffee – Brasil

I was recently connected with Dark Matter Coffee on Twitter (which has fast become pretty much my exclusive coffee network). I was actually planning on going with their coffee for my recent coffee tasting, but unfortunately their online store was under construction. Once it was back up I was quick to place an order.

The Brew
Hario V60 | Hario kettle
17g coffee : 250mL filtered water
Bloom: 50g for 30s. Steady pour.

The Review
It smells nutty and chocolaty. The first sip is nothing but chocolate. It’s not a sweet chocolate, but it’s certainly not bitter or dark either. It’s full and creamy. The second sip is a surprise with a hint of tart lemon. Unexpected. It sits delicately in the background and vanishes after another sip. By the fourth go-round, the nuttiness starts to pop: hazelnuts. Farther into the cup and at slightly lower temperatures, the tartness returns, but this time a bit more like a cherry. Don’t be fooled; these fruit flavors are very subtle. I wouldn’t call this a very fruity coffee. But the subtle tart lemon/cherry in the background really balances out the upfront chocolate, nutty punch.
